We’re less than a hundred days away from Christmas, and we’re uber excited. Aside from being a season of giving, this time of the year is also the best time to try all sorts of delicacies to fill your tummy. That includes some good ol’ freshly-baked bibingka! But what if we told you that you could take this classic Pinoy treat to the next level? Bakeries and cafes have put a new twist to this classic by turning it into the bibingka cheesecake, which is creamy and fluffy and finished off with a burnt sweet taste. Already craving? You don’t have to wait til Noche Buena; here are shops where you can order bibingka cheesecakes:

Wildflour

Wildflour is known for their creative menu, high-quality baked goods, and homey vibes. And they’ve definitely shown their creativity in the bibingka cheesecake with its generous helpings of shredded cheese and salted egg slices on top of a thick creamy yet smokey base. Wildflour has several branches in the metro. You can find them on Instagram and Facebook.

Deli by Chele is known for their charcuterie sets, but you shouldn’t pass up on the chance to try their CHIKA, a.k.a. Cheesecake Bibingka. This recipe by Chef Carlos Villaflor perfectly marries together the techniques and textures that he learned from the Basque country and lovingly married it with his Filipino heritage. You can place an order through their website or find them on Instagram and Facebook.

Fleur specializes in cheesecakes, but their bibingka cheesecake has a spotlight this holiday season. It’s made of creamy cheese filled with salted egg, coconut cream, and cheddar cheese on top of toasted coconut biscuit crust and drizzled with caramelized condensed milk. That description is just making me drool even more. They’re based in Muntinlupa. You can find them on Instagram and Facebook.

Sugar Mommah’s menu is full of baked treats that would satisfy both your savory and sweet cravings. They’ve got sushi bake trays for savory, while their wide range of sugary pastries and cakes are definitely fit for a sweet tooth. And if you want both savory and sweet in one? You should get the Bibingkasque Cheesecake, which is silky and creamy yet with a hint of savory from the salted egg. They also offer other cheesecakes with a Pinoy twist, such as puto bumbong cheesecake, sapin-sapin cheesecake, and tablea cheesecake. You can find them on Instagram and Facebook.
